Porceddu
Porceddu is a traditional Sardinian dish consisting of a whole roasted suckling pig. This dish is a staple of Sardinian cuisine and is often prepared for special occasions and celebrations.
Traditionally, Porceddu is slow roasted on a spit over an open fire. The pig is cooked over low or medium heat, which can take several hours depending on its size and the heat source.
The key is slow cooking to ensure tender, juicy meat with crispy skin.
Adding myrtle branches, which are popular in Sardinia, gives the Porceddu a unique flavor, which is typically enjoyed with a variety of side dishes such as roasted potatoes, grilled vegetables or a simple green salad.
Sardinian wines, particularly robust reds, pair wonderfully with this dish, enhancing the overall culinary experience.
Culurgiones
Culurgiones are a type of stuffed pasta known for their distinctive ear of wheat shape. This shape symbolizes protection and abundance. The classic filling consists of potatoes, Sardinian pepper, pecorino cheese, and mint.
Mint is a key ingredient, adding a fresh touch to the palate. The dough is made from simple ingredients: durum wheat semolina, water, salt and oil.
Culurgiones can be served simply with melted butter and sage, or with a fresh tomato and basil sauce.
Another option is to drizzle them with extra virgin olive oil and sprinkle them with pecorino cheese. They are perfect for a special lunch or dinner, and pair well with a glass of wine.
Seadas
Seadas are one of the most famous desserts in Sardinian tradition. These delicious fried pastries are filled with cheese, usually pecorino or primo salle, and drizzled with honey. Originally prepared as a main dish for special occasions, Seadas are now enjoyed as a dessert throughout Sardinia.
Some variations include adding lemon to the filling, which gives a fresh aroma that contrasts pleasantly with the sweetness and savories of the cheese. Though this is an optional choice.
Seadas are best enjoyed hot when the cheese inside is still soft and gooey.
